Mai got her master's degree in Envirofood: Environmental Protection and Agricultural Food at Hohenheim University, Germany. Prior to that, she studied nutrition and dietetics at Birzeit University, Palestine. Her general research interest includes alternative food networks, food justice, and health. Mai is an alumnus of Marie Sklodowska Curie's (MSCA) Innovative Training Network, called RECOMS (Resourceful and Resilient Communities); she was an early stage researcher (ESR) at Coventry University, UK.
